Even though it may seem difficult at first, gluten free plant based meals are actually very easy to make. Here’s the recipe for main course that can also be served with salads or sandwiches. Millet nuggets can even be eaten without any extras;)
Ingredients (serves 3-4):
100g dry millet
1 chili pepper
fresh parsley
a clove of garlic/dried garlic
2 tbsp ground flaxseed + 6 tbsp hot water
4 tbsp corn flour
4 sun dried tomatoes in olive oil
2 tsp Mexican seasoning mix
salt
black pepper
corn flakes to coat
oil for frying
Instructions:
Rinse the millet and put it into the boiling water. Cover and cook over low heat for about 15-20 minutes. In a small bowl, add the flaxseed meal and water. Stir to combine. Drain the millet and leave to cool.
Combine millet with flaxseed meal. Chop garlic, chili pepper, sundried tomatoes and parsley finely and add to the millet. Mix well. Add flour and spices.
Shape small rectangular nuggets out of the mixture. Coat each nuggets in crumbled corn flakes. Fry in the vegetable oil, until golden brown on both sides. Transfer to paper towels to drain any excess oil. Serve with favorite sauce, e.g. tomato and salad. Enjoy!
