Mornings can be hard and sometimes they can be a real challenge to the parents. That’s why we sometimes need breakfast that is easy to make and quite nutritious. Let’s make something in Italian style;) Our bruschetta with tomatoes, rocket and almond flakes will be perfect for the beginning of another week. And don’t forget about a good cup of coffee to go with it;)
Ingredients (serves 1):
1 small baguette
1 tomato
fresh basil
1 tsp dried oregano
1/2 tsp dried garlic
pinch of sugar
salt
2 tbsp olive oil
handful of rocket
balsamic vinegar cream
almond flakes
Instructions:
Cut the baguette into two thin even slices. Cut tomato into small cubes. Add sugar, salt, chopped basil, oregano and garlic and mix. Add olive oil and mix again.
Preheat the oven to 200 degrees C. Put the baguettes into a springform pan covered with baking sheet. Put tomatoes, mixed with spices and olive oil, on top. Bake the baguettes until lightly browned around the edges.
Put rocket leaves and almond flakes on top. Sprinkle with some balsamic vinegar cream. Enjoy!
