Morning power bowl. Here’s the recipe that combines quinoa with nuts and coconut milk. Energy bowl that provides you with health and strength for the next day. This breakfast will definitely get you back on your feet whether you work out or not!
Ingredients (serves 1):
200 ml coconut milk
½ cup water
50 g dried quinoa mix
2 tbsp coconut shreds
2-3 tbsp maple syrup
1 banana
1 tbsp nuts (cashew nuts/ walnuts)
1 tbsp goji berries
1 tbsp dried cranberries
2 tbsp blueberries (or other fruit)
1-2 tsp cinnamon
Instructions:
Rinse quinoa, put it into the pot and cover with milk. Bring the milk to the boil. Add water, cover and cook over low heat for about 15 minutes.
Add coconut shreds, maple syrup, cinnamon and mix well. Then turn off the heat, cover and leave for about 5 minutes. Cut banana into slices.
Place quinoa in a bowl, add banana, goji berries, dried cranberries and blueberries. Top with chopped walnuts. Enjoy!
