Winter school holidays are ahead of us in Tricity (Poland). Our kids are going to visit their grandparents near Suwalszczyzna known as the north pole of Poland. So it’s time to prepare something sweet for our kids before their trip. And what’s better that homemade yeast buns. Not only kids love it, so watch out;)
Ingredients (15 buns):
1/2 cup grated pumpkin
1/4 cup vegetable oil
25 dag fresh yeast
5 tbsp sugar
2-3 tsp vanilla sugar
1 tsp of vanilla aroma
1 cup plant based milk
3-3.25 cup wheat flour
pinch of salt
Cinnamon apple jam:
4 apples
3 tbsp sugar
fresh juice of 1/2 orange
1.5 tsp cinnamon
Instructions:
Blend pumpkin with the oil. In a large mixing bowl dissolve the yeast and sugar in warm milk. Mix and leave to prove.
Then add blended pumpkin, vanilla sugar, aroma and mix on low speed for about 3-4 minutes. Add a pinch of salt and sifted flour. Knead the dough until it’s smooth and firm, and is no longer sticky. If necessary, add some flour.
Cover the dough and leave it in a warm place for about 2 hours (until it has doubled in size).
Prepare the jam. Peel the apples, remove the seeds and cut into small cubes. Put the apples into a pan, add sugar and orange juice and cook over low heat for about 3-4 minutes. Add cinnamon, mix and keep cooking it over low heat until the apples are soft.
Divide the dough into 15 even parts. Roll each part into a rectangle. Put about 2-3 tsp of jam onto 1/3 of the rectangle, roll it up twice and cut the third part of the rectangle into even strips.
Fold the rectangle starting from the side stuffed with the jam. Seal the edges together and cover the rectangle with the part cut into strips.
Lay the buns on a baking pan covered with baking sheet. Cover and leave to rise in a warm place for about 15 minutes.
Then smear the top of each bun with some plant based milk. Preheat the oven t 180 degrees C. Bake the buns for about 25-30 minutes. Enjoy!
