There are blogs which are a great inspiration to us. Here’s the recipe inspired by one of recipes by Jadłonomia. Perfect combination of pumpkin, sweet potatoes and tomatoes in one soup.
Ingredients:
2 sweet potatoes
140g pumpkin
ginger slice
1/2 chili pepper
1 tomato
garlic (a clove of fresh garlic of dried garlic)
400ml coconut milk
½ cup water
5 kaffir lime leaves
2-3 tbsp lemon juice
1 tbsp soy sauce
2 tbsp vegetable oil (e.g. coconut)
Instructions:
Peel and cut the sweet potatoes and pumpkin into cubes. Cut ginger into smaller parts. Chop chili pepper finely. Cut tomato into cubes. Heat vegetable oil in a large pan. Add garlic, chili pepper, ginger and lime leaves and fry for about 1 min, while tossing. Then add tomato and fry for another 1 minute, while tossing.
Add sweet potatoes and pumpkin, mix well and fry for 2-3 minutes. Then add coconut milk, cover and cook over low heat until the potatoes and pumpkin are soft. When the veggies are soft, remove the kaffir leaves and blend the soup well.
Season with some salt and pepper. Add 2-3 tbsp lemon juice and soy sauce. Mix, add water and cook for another 2-3 minutes. Serve with black sesame seeds and parsley leaves/ coriander. Enjoy!
