There’s nothing better than when your family and closest friends accept who you are despite the tradition. Every year for Christmas our Mum has prepared for us soy steaks in traditional tomato sauce which in original, non-vegan recipe, is used for fish. Here’s the recipe of our Mum for the soy steaks and tofu in tomato sauce and in vinegar marinade. It’s a must have on your Christmas table!
Ingredients - tomato sauce:
2 big carrots
2 onions
1 parsley root
1 bay leaf
2 allspice berries
1 tsp sweet pepper
1 tsp sugar
salt
250 g tomato puree
about 1 cup of water
2 tbsp olive oil
Ingredients - vinegar marinade:
2 cups water
6-7 allspice berries
1/4 cup of water
5 bay leaves
1 tbsp sugar
3/4 tbsp salt
1 onion
Additionally:
200 g soy steaks or 360 g natural tofu (100 g soy steaks/ 180 g tofu for marinade)
salt
black pepper
4 tbsp wheat flour or chickpea flour
vegetable oil
Instructions - soy steaks/tofu:
Cover the soy steaks with water and cook over low heat until they’re soft. Drain them and leave to cool. Season the steaks with salt and pepper and fry both sides in vegetable oil. Transfer to paper towels to drain any excess oil.
Cut tofu into slices. Season with salt and pepper. Coat each tofu slice in wheat or chickpea flour. Fry on both sides.
Prepare tomato sauce and vinegar marinade.
Tomato sauce:
Peel and grate the carrots and parsley root on the large holes of a box grater or using a food processor's grating attachment. Peel and cut the onion into thin slices. Heat the olive oil on a frying pan and add the onion. Fry until golden and then add the veggies. Fry for a while, stirring continuously, until the veggies are soft. Add the tomato puree, season with some salt and pepper, add bay leaf and allspice berries. Cover and cook over low heat for about 10 minutes. Add some water, sugar and sweet pepper, mix and cook for about 5 minutes. If the sauce is too thick, add more water. Then cover soy steaks/tofu with the sauce. Cover and leave in the fridge to cool. That’s it!
Vinegar marinade:
In a pot bring water and vinegar to boil. Peel and cut the onion into thin slices. Add it to the marinade. Add the spices, sugar and onion and cook for about 5-8 minutes. Cover soy steaks/ tofu with the marinade. Leave in the fridge to cool. That’s it!
