It’s time for New Year’s Eve party! And to make it better, we’ve prepared the recipe for lemon and orange cookies that are perfect for such parties:) Enjoy the last day of 2016 and remember to take care of your pets during this crazy night.
Ingredients (about 28 cookies):
1 cup grated pumpkin
½ cup vegetable oil
1/2 cup sugar
1 tsp vanilla sugar
2 and 1/3 cups wheat flour
grated rind of 1 orange
grated rind of 1 lemon
pinch of salt
a few drops of vanilla extract/ the seeds out of vanilla pod
2 tsp baking powder
pinch of baking soda
4 tbsp orange juice
Instructions:
Blend pumpkin with the oil. Put blended pumpkin into the mixing bowl, add sugar, vanilla sugar and mix until you get smooth mixture. Add orange and lemon rind, pinch of salt, vanilla extract, orange juice and keep mixing until all the ingredients combine.
Add sifted flour, baking powder and baking soda. Knead the dough until it’s smooth and firm, and is no longer sticky.
Roll the dough to 0.5 cm thick. Cut out the cookies. Lay the cookies on a baking pan covered with baking sheet.
Preheat the oven to 180 degrees C. Bake the cake for 20 min. Leave on a wire rack to cool. Enjoy!
