Red pepper in another recipe. This time, we’ll use the pepper with zucchini served on puff pastry under oatmeal crumble. Perfect for lunchbox.
Ingredients (serves 2-3):
1 sheet puff pastry
1 zucchini
1/2 red bell pepper
1/2 chili pepper
salt
black pepper
dried garlic
1 tsp curry powder
2 tbsp coconut milk
1-2 tbsp olive oil
Additionally:
150g rolled oats
2 tbsp coconut oil
Instructions:
Cut the veggies into cubes. Chop chili pepper finely. Heat the olive oil on a frying pan and add bell pepper and chili pepper. Fry for about 2 minutes while tossing.
Then add zucchini and fry for another 3 minutes, while tossing.
Season the veggies with some salt, pepper, dried garlic, curry powder and mix well. Add coconut milk and cook over low heat for maximum 2 minutes.
Press the pastry into a tart pan. Trim any excess pastry.
Put the veggies on the pastry.
In a small bowl combine rolled oats with coconut milk. Sprinkle the tart with oatmeal crumble.
Preheat the oven to 200 degrees C. Bake the tart for about 25-30 minutes.
Serve with favorite salad. Enjoy!
