SWEET PUMPKIN PANCAKES


Here’s the recipe for our biggest and favorite discovery of this autumn - sweet pumpkin pancakes. Perfect for breakfast, dinner or lunch. Our kids simply fell in love with these pancakes. So, we always have some pumpkin waiting in the fridge:)





Ingredients (about 10 large pancakes):

1 cup grated pumpkin
½ cup vegetable oil
pinch of salt
2 tbsp sugar
1 tsp vanilla sugar
2 drops of vanilla extract
1 tsp baking powder
2 cups plant based milk
2 cups wheat flour


Instructions:

Blend grated pumpkin with vegetable oil until you get smooth mixture. Pour the pumpkin mixture into a large mixing bowl. Add vanilla sugar, sugar, vanilla extract and mix. Then add milk, salt and mix again. Sift dry ingredients (flour and baking powder) and add to the batter. Mix all the ingredients. Fry both sides until golden brown.


*Note: the batter is really delicate so be careful when turning the pancake upside down.

*Before frying the pancakes, smear the pan with some oil (e.g. coconut oil) so that the batter does not stick to the pan!



Serve with favorite toppings. Enjoy!
