STRAWBERRY MUFFINS


Kids love desserts. So sometimes we bake something sweet just for them. Here’s the recipe for strawberry muffins. Easy to make, delicious, vegan and what’s most important - homemade!





Ingredients (16-18 muffins):

500g wheat flour
150g sugar
1 tsp baking powder
1/2 tsp baking soda
pinch of salt
2 tablespoons ground flaxseed + 6 tablespoons hot water
120ml vegetable oil
300 ml plant-based milk
200-250g strawberries
1-2 tbsp potato flour to coat strawberries



Instructions:

Wash the strawberries, cut them into halves and coat in potato flour.

In a mixing bowl, add the flaxseed meal and water. Stir to combine. Add sugar, salt and start mixing. While mixing, slowly add milk and oil. Sift dry ingredients (flour, baking powder and soda) and add to the rest of the ingredients. Mix with a spoon. Now add the strawberries. Preheat the oven to 180 degrees C. Place muffin cups in the muffin pan. Fill the cups with the batter - fill each cup 2/3 full.


Bake for about 25 minutes (until wooden skewer comes out clean). 


Leave on a wire rack to cool.
