September 1st - for many people means coming back to school reality. What can be a good snack for a kid at school? What can you take in your lunchbox to work? Here’s the recipe for green spinach cupcakes. Finally, there’s a chance your kids will love spinach.
Ingredients (12 cupcakes):
100g baby spinach
3 tablespoons ground flaxseed + 12 tablespoons hot water
1 cup sugar
1 tsp vanilla extract
3/4 cup vegetable oil
500g wheat flour
3 tsp baking powder
pinch of baking soda
grated rind of 1 orange
4 tbsp orange juice
100-150g raspberries (fresh or frozen)
potato flour to cover the fruit (optional - recommended with frozen fruit)
Instructions:
Blend spinach with vegetable oil and orange juice until you get smooth mixture.
In a large mixing bowl combine hot water with flaxseed meal and sugar. Add vanilla extract, orange rind and mix until the batter is smooth. Add blended spinach. Mix well. At the end, add sifted flour, baking powder and baking soda and mix all the ingredients using a spoon.
Preheat the oven to 180 degrees C. Place muffin cups in the muffin pan. Fill the cups with the batter - fill each cup 2/3 full.
Put the raspberries on top of each cupcake and press gently.
Bake for about 40-50 minutes (until wooden skewer comes out clean). Leave on a wire rack to cool.
