CREAMY ZUCCHINI AND CARROT SOUP WITH GINGER (gf)


Simple food is the best! We like using veggies and fruit that are currently in season in Poland. Especially classic Polish veggies that are easily available and at a reasonable price. Here’s the recipe for creamy carrot and zucchini soup with ginger and coconut milk.




Ingredients:

2 big carrots
2 zucchinis
a piece of ginger (a slice 1.5 cm)
1l of vegetable broth (recipe)
2 tbsp coconut milk (solid layer)
salt
black pepper


Additionally:

100g basmati rice


Instructions:

Prepare the vegetable broth as per the recipe. Slice the carrot and zucchini and add it to the boiling broth. 


Cook for about 15-20 minutes until the veggies are soft. Then, leave the soup to cool.

Peel ginger and grate on the small holes of a box grater or using a food processor’s grating attachment. Add it to the soup 


and blend it until it’s smooth. 


Add coconut milk. Mix well. Season with some salt and pepper.



Cook the rice. Serve the soup with 3 tbsp of rice. Enjoy!
