CHOCOLATE CAKE WITH RASPBERRIES


It’s Friday. As always, it’s time for vegan dessert. Here’s the recipe for chocolate cake with raspberries. One of our favorite cakes and for sure it’s a favorite cake of chocolate fans visiting us. Check it out but don’t forget about doing some workout before or after;)





Ingredients:

1,5 cups wheat flour
0.5 cup sugar
1 tsp baking powder
100g dark chocolate
1 cup plant milk (coconut/almond)
0.5 cup vegetable oil
pinch of baking soda
2 tbsp ground flaxseed + 5 tbsp hot water
¾-1 cup raspberries


Instructions:

In a mixing bowl, add the flaxseed meal and water. Stir to combine. Add sugar and start mixing. 


In the meantime melt the chocolate with 1/4 cup of milk. Add the rest of the measured milk and vegetable oil to the mixing bowl with flaxseed mixture and keep mixing. Take 6 tbsp of the batter to a small bowl and combine it with 3 tbsp flour, 1/3 tsp baking powder and some baking soda. Add melted chocolate to the remaining batter. At the end, add sifted flour, baking powder and baking soda and mix all the ingredients using a spoon (do not use electric mixers at this point!).


Preheat the oven to 180 degrees C. Put the batter into a springform pan covered with baking sheet. Pour the small portion of batter (the one without chocolate) over the chocolate batter and put the raspberries on top (press gently into the batter using your fingertips).



Bake for about 45-50 minutes (until wooden skewer comes out clean). Enjoy!
