SOBA NOODLES WITH VEGGIES AND TOMATO SAUCE

 We’re back with the new recipes. Here’s a good idea for a vegan lunch. We’re going to use yellow string beans - finally available at a reasonable price in Poland.  Just add some veggies, tomato sauce, curry powder and gluten free buckwheat noodles - Soba noodles. Perfect combination.




Ingredients (serves 3)

2 bell pepper
1/2 zucchini
1 big onion
300g yellow string beans
1 tin of chopped tomatoes
2 tbsp tomato puree
2/3 tsp curry powder
1 tbsp of coconut oil
salt
sugar
1/3 tsp dried garlic
black pepper


150 g Soba noodles (Japanese buckwheat noodles)

fresh parsley



Instructions:

Dice zucchini, bell pepper and onion. Cut yellow string beans into halves. 

Melt coconut oil in a pan. Add the onion. Fry the onion until it’s golden brown. Add bell pepper. Fry for a while. Add yellow string beans and fry the veggies for about 4 minutes. Add zucchini and fry the veggies again. Add curry powder, salt and garlic. Mix everything.


Add tomatoes and a pinch of sugar. Add some water so that the sauce covers all the veggies. Cook for about 10 minutes, stirring from time to time. Then add tomato puree and black pepper. You can also add some more sugar, salt and curry powder if necessary. Cook for about 3 minutes.

Boil Soba noodles as recommended on the bag (about 3-4 minutes in boiling salted water).

Drain the noodles and put it on a plate. Serve the noodles with the veggie sauce on top and sprinkle with chopped parsley.
