PANCAKES WITH HOMEMADE STRAWBERRY AND ORANGE JAM


Vegan pancakes? A couple of years ago we thought it was impossible to make perfect egg free pancakes. But we couldn’t be more mistaken! Here’s the recipe for vegan pancakes! Polish pancakes with homemade strawberry and orange jam. Delicious and easy to make.





Ingredients (6-8 pancakes):


400ml almond milk (or other plantbased milk)
200ml sparkling water
300g wheat flour
2 tsp ground flaxseed meal
8g vanilla sugar
1 tbsp coconut oil (melted)
pinch of salt
1/2 tsp baking powder


Strawberry and orange jam:

200-250g strawberries
50g sugar
fresh juice of 1 orange


Additionally:

banana
blueberries
almond flakes


Instructions:

In a large bowl combine milk, water, flaxseed meal and vanilla sugar. Sift the flour and the baking powder and add to the batter. Add coconut oil, salt and whisk until the mixture is smooth (but not too thick!).



In the meantime, wash the strawberries and cut them into halves. Put the strawberries into a small pan/ saucepan. Cover it with sugar and orange juice. Cook over very low heat for about 10 minutes, while stirring occasionally. 


Don’t blend it.

Heat the pan over a moderate heat. Ladle some batter into the pan, tilting the pan to move the mixture around for a thin and even layer. Fry the pancakes both sides.


 Serve with warm* jam, fresh fruit and almond flakes. Enjoy!


*If you want, you can also prepare the jam a day before and serve it cold the next day.
