EASY SPRING/SUMMER VEGETABLE SOUP


Summer is finally here. It’s hot so let’s get crazy with the veggies that are currentlu in season in Poland. When it’s hot outside you feel like having light meal full of veggies. So here’s the recipe for a light soup made of fresh veggies. It’s perfect for a sunny day like today.





Ingredients (serves 4):

6 potatoes
2 carrots
1/2 small cauliflower
1/2 leek
1 parsley root
a piece of celery
1/2 cup peas
handful of finely chopped cabbage
1 l of water
5-6 peppercorns
1 allspice berry
1 bay leaf
1 tbsp olive oil
salt
black pepper
fresh parsley


Instructions:

Pour water into the pot, add allspice berries, bay leaf and peppercorns. Bring the water to boil. Peel carrots, potatoes and parsley root. Cut potatoes, carrots, parsley root and celery into cubes. Divide cauliflower into small florets. Slice the leek. Add the veggies, cauliflower, peas, cabbage and olive oil to the boiling water. Reduce heat and cook for a few minutes until potatoes are tender. 


Season with salt and pepper. Serve the soup with chopped parsley leaves. Enjoy!
