BROAD BEAN SANDWICH PASTE


Season for broad bean has just started in Poland so you’ll probably find some recipes with the use of this veggie in the nearest future. Not only does it taste good, but it also contains lots of vegan protein and vitamins including folic acid! Here’s the recipe for breakfast - broad bean sandwich paste with a little bit of chili pepper.



Ingredients:

250 g broad beans
1/3 chili pepper
2 tbsp finely chopped fresh parsley
1/4 bundle spring onion
salt
2 tbsp olive oil
2 tbsp lemon juice



Instructions:

Cook the broad beans in salted water for about 4 min, drain it and then shell it.

Chop chili pepper and spring onion finely.

Put shelled beans into the blender. Add chili pepper, parsley and spring onion. Add olive oil and lemon juice. Season with salt and blend until the mixture is smooth. That’s it, enjoy:)
