SALAD WITH SPINACH AND MANGO


It’s dinner time. Today green veggies rule - spinach with sweet mango, hot chili pepper and sunflower seeds. It’s so easy to make but so healthy especially when it comes to a pregnant lady and her baby. The mommy to be needs lots of vitamins now!





Ingredients (serves 2)

2 handfuls baby spinach
1/2 mango
10 cherry tomatoes
1/2 chili pepper
1/2 red ramiro pepper
4-6 strawberries (optional)
2-3 tablespoons roasted sunflower seeds
2 tablespoons olive oil
salt
black pepper


Instructions:
Wash spinach and place it on a plate. Cut mango into small cubes. Cut cherry tomatoes into halves. Chop chili pepper finely. Cut ramiro pepper into sticks/slices and slice the strawberries. Put the veggies and sunflower seeds on top of the spinach. Sprinkle with olive oil, season with salt and pepper. Enjoy!
