4 tablespoons peanut butter
150 g wheat flour
50 g sugar
50 ml vegetable oil
50 ml soy milk
1 teaspoon baking powder
1/2 teaspoon baking soda
2 tablespoons ground flaxseed + 3 tablespoons hot water
Instructions:
Mash bananas finely with a fork. Add peanut butter, vegetable oil and soy milk. Mix all the ingredients well. In a small bowl, add the flaxseed meal and water. Stir to combine. Add it to the rest of the ingredients. Sift the measured flour, baking powder and soda and slowly add to the batter, while stirring continuously.
Place muffin cups in the muffin pan. Fill the cups with the batter. Preheat the oven to 180 degrees C. Bake for about 15-20 minutes
