AVOCADO SALAD


It’s time for some salad. But not any salad but salad with avocado and aromatic green dressing of basil and parsley leaves. It’s perfect for light lunch or dinner. It’s green, it’s healthy and it’s delicious!








Ingredients (Serves 2):

1 avocado
1 tomato
2 kirby cucumbers
handful of lettuce
handful of spinach
4 radishes

GREEN DRESSING:

1 tbsp chopped basil
1 tbsp of finely chopped fresh parsley
1/2 tsp balsamic vinegar cream
3 tablespoons olive oil
1 tablespoon lemon juice
salt
black pepper
pinch of dried garlic
1 tablespoon water

















Instructions:

Slice avocado, cucumbers and radishes. Cut tomato into cubes. Put lettuce and spinach into salad bowl. Add the rest of the veggies. Place avocado on the top of the salad.

Combine all dressing ingredients in a blender until it’s smooth. Serve the salad with the dressing on top.


You can also serve this salad with boiled young potatoes sprinkled with chives.
