1 small zucchini
handful of cashew nuts
4 tablespoons coconut milk (solid layer)
1 tablespoon red curry paste
180 g natural tofu
1/2 tablespoon coconut oil (melted)
1/3 teaspoon curry powder
salt
black pepper
100 ml water
Instructions:
Cut tofu into cubes. Peel zucchini and carrot and slice them. Cut bell pepper into thin sticks.
Mix coconut oil with curry paste. Heat the frying pan and add coconut oil with curry paste. Add tofu and fry for w few minutes. Add bell pepper and carrot. Fry for a while and add zucchini, cashew nuts, salt, pepper and curry powder. Fry for another few minutes and then add 100ml water. Cook for 4-5 minutes and then add coconut milk. Cook over low heat until the veggies are soft.
