Today it’s time for real vitamin bomb for dinner. Spinach with beetroot - no cooking, no heat treatment! Perfect combination of vitamins and minerals at the beginning of spring. Plant power.
Ingredients (serves 2)
1 small beetroot
handful of spinach
handful of rocket
handful of pecan nuts
6 strawberries
1/2 red onion
1 small carrot
1/2 chili pepper (optional)
Dressing:
fresh juice of 1/2 orange
1 teaspoon of white wine vinegar
2 tablespoons olive oil
salt
black pepper
Marinade for beetroot:
1 tablespoon olive oil
1 teaspoon of balsamic vinegar
1 teaspoon sugar
Instructions:
Peel the beetroot and cut into thin slices. Put olive oil, balsamic vinegar and sugar to a small bowl. Mix well. Pour the marinade over the beetroot and put into the fridge for at least 1 hour.
Peel the carrot. Cut it into thin slices using vegetable peeler. Slice the onion. Cut strawberries into halves.
Put all dressing ingredients into a bowl and mix well.
Put spinach, rocket, marinated beetroot and the rest of the veggies on a plate. Top with strawberries and pecan nuts. Pour the dressing on the salad.
