RED LENTIL SOUP


Lentil is one of our favorite legumes. You can make almost anything out of it. Today the recipe for warming soup that provides energy for the entire day.




Ingredients (serves 4):

1 l of water
bay leaf
2 allspice berries
5-6 peppercorns
1/2 parsley root
a piece of celery
1 tablespoon olive oil
150g red lentil
1 onion
1 red bell pepper
2 carrots
6-8 potatoes
1 tin of chopped tomatoes
2 teaspoons tomato puree
1/2 teaspoon sweet pepper
1 teaspoon sugar
2 teaspoons curry powder
salt
pepper
fresh parsley


Instructions:
Add bay leaf, peppercorns, allspice grains, a piece of celery and parsley root to water boiled in a pot.  Peel and cut the carrots and potatoes into cubes.  Add the carrots and potatoes to the boiling water. Reduce heat and cook for a few minutes. Chop the onion and fry on 1 tablespoon of olive oil. Cut the bell pepper into cubes. Add the onion and bell pepper to the soup. Cook for another 5 minutes and then add red lentil. Then add tomatoes, tomato puree and spices. Mix well, cover and cook over low heat for about 5-10 minutes, stirring occasionally, until the potatoes are soft. Serve with fresh parsley.
