VEGAN YEAST BUNS WITH STRAWBERRIES AND CINNAMON

When I became a vegan I knew I needed to find a perfect recipe for vegan yeast buns.I finally found an amazing recipe for blueberry buns at Ewelajna’s http://kuchniapelnasmakow.blogspot.com/2015/07/lipiec-chciaam-wychwalac-i-bogosawic-ze.html . It’s the best recipe for a vegan yeast cake I have ever found. This recipe is cherished by my entire family.I use this recipe with a few minor changes to make traditional yeast buns with fruit. Today let’s have yeast buns with strawberries. They say it’s not the best idea to eat hot pastries but you’d better hurry. My family can eat all of these buns before I can even make myself a cup of coffee:)  That's how delicious these buns are:)

Ingredients ( makes 6-8 buns):
BASIC DOUGH: 
400 g flour
25 g fresh yeast
150 ml plant-based milk
50g xylitol or sugar
fresh vanilla bean or 1 tablespoon vanilla sugar
pinch of salt
100 ml heated coconut oil
tablespoon of sugar
Filling:
150 g strawberries (frozen or fresh)
2 table spoons xylitol or sugar
1/2 teaspoon cinnamon
1 teaspoon potato flour
Instructions:
Sprinkle the yeast into a bowl and dissolve it in warm milk with a tablespoon of sugar and a tablespoon of flour. Cover with a tea towel and leave to prove.
Sieve the flour into the mixing bowl. Add sugar and vanilla beans/vanilla sugar and a pinch of salt.  Add leaven and coconut oil.
Knead the dough until it’s smooth and firm, and is no longer sticky.
Leave to prove for 1.5 hour.
Preheat the over to 180 degrees C. Put strawberries to a mixing bowl, add sugar, cinnamon and potato flour. Mix everything.
Shape the dough into a ball. Take small pieces of dough and shape them into balls (the size depends on how big buns we want to make)  Make a wide indent in the center of each bun and fill with strawberry filling.
Place the buns on a baking tin and leave to prove uncovered for 15 minutes. Brush each bun with a plant-based milk. Bake for 15-20 minutes or until golden.
Sprinkle with caster sugar or homemade icing (caster sugar mixed with hot water or lemon juice).
