PANINI WITH TOMATOES AND ROCKET

Good breakfast means the good start of the day. What about Italian food for breakfast served with good black coffee in bed? Definitely it sounds good! The weekend is here and since we have more time to prepare delicious breakfast, you need to prepare panini. Vegetarian with veggies and mozzarella or vegan with veggies and/or vegan mozzarella (M.’s favorite).
Whichever you choose, this morning is going to be good :)





Focaccia

Ingredients (1 focaccia):
25 g fresh yeast
180 ml warm water
1 teaspoon sugar
500 g flour
1 teaspoon salt
1 tablespoon olive oil
teaspoon of oregano/ rosemary (dried)
olive oil (to smear baking tray)
Sprinkle the yeast into a bowl, dissolve it in warm water with sugar and leave to prove.
Sieve the flour into a separate mixing bowl. Add salt, leaven and olive oil. Knead the dough until it’s smooth and firm, and is no longer sticky.
Leave to prove for 20-40 minutes (until it is double in bulk).
Preheat the oven to 220 degrees C. Smear the baking tray (e.g. round tart tray or springform pan - 24 cm) with olive oil or cover with baking paper. Press the dough out with your fingers to fit the baking tray (about 2-3 cm thick).  Poke dimples into the surface of the focaccia with your fingertips. Sprinkle with oregano/rosemary. Bake for about 20 minutes or until golden on top. Leave to cool.
Ingredients for panini (serves 4):
4 tomatoes
fresh basil
5-6 tablespoons olive oil
rocket leaves
1 teaspoon sugar
10 dag vegetarian mozzarella (optional)
Chop the basil and mix with olive oil.  Chop tomatoes, put into the mixing bowl and add a teaspoon of sugar. Grate the mozzarella on the large holes of a box grater or using a food processor's grating attachment. Cut focaccia into triangles. Cut each triangle lengthwise and coat the inside bottom layers with the olive oil with basil, put tomatoes, sprinkle with mozzarella and rocket leaves. Top each triangle with the other half and press.  Preheat the oven to 200 degrees C. Grill in the oven for 2-3 minutes / until golden on top. You can also use the sandwich press. Serve with favorite salad.
