CHINESE NOODLES WITH VEGGIES AND MARINATED TOFU


Do you like Asian food? If you do, then you must try our vegan version of Asian food. Chinese noodles with veggies and marinated tofu. Prepare your chopsticks and get ready to cooking ;)



(serves 2)
Ingredients:
1 onion
1/2 bell pepper
200 g Chinese cabbage
90 g natural tofu
3 - 4 mushrooms
2 carrots
100 g green peas (fresh or frozen)
125 g mie noodles
2 tablespoons olive oil
100 ml water
5 tablespoons soy sauce
1/2 teaspoon dried garlic
sunflower sprouts
Marinade for tofu:
1 tablespoon olive oil
2 teaspoons soy sauce
1 teaspoon of agave syrup (or 1 teaspoon of honey - for vegetarians)
1/2 chili pepper finely chopped
sesame seeds
Mix all the marinade ingredients. Cut tofu into slices/cubes and pour the marinade over it.  Cover and leave in the fridge for at least 1 hour.
Dice the onion, slice bell pepper and mushrooms. Shred the cabbage, peel the carrots and cut them into sticks. Boil the noodles as recommended on the bag. Then rinse in cold water, drain and put to one side. Heat the olive oil on a frying pan and add carrots and bell pepper. Fry while stirring continuously. Add onion and garlic. Fry for another 1  - 2 minutes, then add mushrooms and green peas. Mix everything and fry for another 3 minutes while tossing. Add water and soy sauce, mix and then add noodles. Keep on tossing and stirring till the veggies are mixed well with the noodles. Switch off the fire. In the meantime, coat the tofu with sesame seeds and roast on a frying pan until golden.  Serve with tofu and sunflower sprouts.
